Ham and Potato Skillet

3 cups hash brown potatoes
1/4 cup chopped onion
1 cup chopped red apple
2 tbsp water
1 tsp dried sage
1 cup diced fully cooked lean ham
2 cups finely chopped broccoli
1 1/2 cups milk
3 eggs
3 egg whites
1/4 tsp salt
 
Thaw potatoes for 30 minutes. Press between paper towels to remove moisture; set aside. In ovenproof skillet cook onion, apple, water and sage for 5 minutes over medium heat. Remove from heat and stir in potatoes, ham and broccoli. In a bowl combine milk, eggs, egg whites and salt. Pour in skillet. DO NOT STIR! Bake at 350 for 30-35 minutes or until center appears just set.

Note: If desired you can sprinkle with 2 oz of grated cheese after you remove skillet from oven-- 1/4=359 calories/11 g. fat/4 g. fiber
