1 1/4 pounds shrimp, peeled and deveined
1/4 cup dry bread crumbs
3 tbsp fresh parsley, chopped
1 tsp grated lemon zest (optional)
1/4 tsp salt
1 1/2 tbsp fresh lemon juice
3 garlic cloves, minced
1/2 tbsp olive oil
Preheat oven to 400. Coat four individual custard dishes with nonstick spray. Divide shrimp
evenly among the dishes; set aside.
Combine remaining ingredients, stirring till mixed; sprinkle evenly over shrimp. Place dishes
on a baking sheet and bake for 13 minutes.
