2 cups flour
1/3 cup brown sugar
1 tbsp baking powder
1 cup mashed very ripe banana (about 2 large)
1/3 cup skim milk
1 tsp vanilla
2 egg whites
Combine flour, brown sugar and baking powder; stir to mix. Add banana, milk, egg and egg whites.
Stir just until dry ingredients are moistened. Coat muffin cups with nonstick spray and fill 3/4 full. Bake at 350 for 14-16
minutes or just until toothpick inserted in center comes out clean. Let rest for 5 minutes before serving.
Makes 12 muffins/1 muffin=115 calories/0 g. fat/1 g. fiber
