1 cup quick cooking oats
1 cup + 2 tbsp orange juice
1 1/2 cups flour
1/2 cup sugar
1 tsp baking powder
1 tsp baking soda
2 egg whites
Topping:
3 tbsp quick cooking oats
1 tbsp frozen orange juice concentrate, thawed
1 1/2 tsp sugar
To make the topping: combine the topping ingredents until crumbly. Set aside.
Combine the orange juice and oats and set aside for 20 minutes. Combine the flour, sugar,
baking powder and baking soda and stir to mix well. Add the orange juice/oat mixture and the egg whites to flour mixture;
stir just until dry ingredients are moistened. Coat muffin cups with nonstick spray and fill 3/4 full with batter. Sprinkle
topping evenly over muffins. Bake at 350 for 14-16 minutes or until a toothpick inserted in center comes out clean. Let stand
for 5 minutes before serving.
Makes 12 muffins/1 muffin=138 calories/1 g. fat/1 g. fiber
