I got this recipe off the WW boards--GratefulDaisy posted it.
1 1/2 cups flour
1/3 cup sugar
3-4 tsp poppy seeds
1 tsp baking soda
3/4 cup plain nonfat yogurt
2 egg whites
1 tsp vanilla or almond extract
Combine the flour, sugar, poppy seeds and baking soda and stir to mix well. Add the yogurt,
egg whites and extract. Stir just until dry ingredients are moistened. Coat muffin cups with nonstick spray and fill 3/4 full
with batter. Bake at 350 for 14-16 minutes or until toothpick inserted in center comes out clean. Remove from oven and let
cool for 5 minutes before serving.
Makes 10 muffins/1 muffin=106 calories/0.9 g fat/2.2 g. fiber
