I know I got this one off the WW boards...but I don't seem to have saved who I got it from.
My daughter loves this one!!
1 large onion
1/4 ounce corn flakes, crushed
1 pinch red pepper
1 pinch garlic powder
1 pinch seasoned salt
1 egg white
Preheat oven to 350. Spray a 2 cup round baking dish with cooking spray. Trim root end off
of onion so it stands upright. Slice off about 1/2 inch from top and remove peel. With sharp knife, cut triangle slices to
center of onion, slicing from top down and stopping 1/2 inch from bottom. Work your way around to make several 'petals'.
Spray with cooking spray and place in microwavable bowl. Cover and microwave on high for 3-4 minutes or until onion is slightly
tender and petals have begun to open. In small bowl combine corn flake crumbs and spices; set aside. In a medium bowl beat
egg white until foamy. Dip onion in egg white, coating petals thoroughly. Place in prepared round baking dish and sprinkle
evenly with cornflake mixture. Bake about 10-12 minutes, or until lightly browned and crisp.
