3 cups shredded potatoes (appx 1 lb)
3 oz canadian bacon, diced
4 eggs
1/2 cup diced onion
1/2 green pepper, diced
2 cans mushrooms or 1 container sliced fresh mushrooms
12 oz can fat free evaporated milk
salt and pepper to taste
1 cup fat free cheddar cheese
Preheat oven to 350. Arrange potatoes in bottom of baking pan. Sprinkle with cheese,
canadian bacon, peppers, mushrooms and onion. In bowl combine eggs, milk, salt and pepper. Pour in pan. Bake 40 minutes or
until center appears set. Let stand 5 minutes before cutting.
