1 1/2 tsp light margarine
1/4 cup sugar
1 egg white
1/2 cup pumpkin
1 tbsp milk
1 1/4 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
1-1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp cloves
Cream together margarine and sugar. Add egg white, pumpkin and milk; mix well. Add flour,
baking powder and spices; mix only until dry ingredients are moistened, do not overmix. Pat dough into a 3/4-1 inch thick
circle; cut into 8 equal pieces. Place on baking sheet that has been sprayed with non stick spray. Bake at 375 for 18-20 minutes.
