1/4 cup flour
2 cups chicken broth
salt and pepper to taste
1-2 bay leaves
2/3 cup finely chopped celery
1/4 cup finely chopped onion
4-5 cups sliced fresh mushrooms
2/3 cup skim milk
In a small saucepan whisk together flour and chicken broth. Add salt, pepper and bay leaves.
Simmer, uncovered until thickened, stirring occasionally. Meanwhile spray another saucepan with nonstick spray. Saute celery
and onion until tender. Add broth mixture; bring to a boil. Reduce heat, add mushrooms and simmer uncoverd for 15 minutes,
stirring occasionally. Add milk; heat through. Discard bay leaves.
