Puffy Pancake

2 large eggs
1/2 cup flour
1/2 cup milk
dash nutmeg
2 tsp powdered sugar
1 1/2 tbsp lemon juice

Preheat oven to 425. Beat eggs until fluffy; alternately beat in flour and milk; then add nutmeg (do not overbeat, mixture should be lumpy). Pour batter in sprayed pan. Place pan in upper third of oven. Bake 15-20 minutes (pancake should puff and turn brown). Sprinkle with sugar and bake for 1 minute longer. Sprinkle with lemon juice. Note: Very good topped with sliced strawberries, raspberries or sliced peaches (but be sure to add the extra points).
