Irish Soda Bread

3 3/4 cups flour
1/4 cup sugar
1 1/2 tsp baking powder
1/3 cup + 2 tbsp light margarine
1 tsp baking soda
1 1/4 cups raisins soaked in warm water, then drained
1 1/4 cups skim milk
1 egg
 
In large bowl combine dry ingredients; cut in margarine until mixture resembles coarse meal. Stir in raisins. In small bowl combine milk, egg and baking soda, beating until well mixed; pour into flour mixture and stir to combine. Turn dough onto floured board and knead until smooth and elastic. Shape into 8 inch round loaf and place in a sprayed round baking pan. Cut a cross about 1/2 inch deep through surface of dough. Bake for 1 hour at 350, or until golden brown.

Note: This is a big loaf...you can make it into 2 smaller rounds if desired and place on a baking sheet.
