Soften.....1 pkg yeast in 1/4 cup warm water
Combine.....in large bowl, 2 cups warm water, 2 tbsp melted shortening, 1 tbsp salt and 1
tbsp sugar.
Add.....softened yeast
Add gradually.....7-7 1/2 cups flour to form a stiff dough.
Knead.....on floured surface until smooth and satiny, 5-8 minutes. Place in a bowl and cover.
Let rise.....in warm place until light and doubled in size, 1-1 1/2 hours.
Punch down.....and let rise again until light, about 30 minutes.
Divide.....dough in half. Shape into loaves. Place in pans and cover.
Let rise.....until light and doubled in size, 45-60 minutes.
Brush.....tops of loaves with egg white.
Bake.....at 425 for 15 minutes, then at 350 for 20-25 minutes or until brown.
