Cornmeal Pear Cake

1 1/2 cups flour
1 cup brown sugar, packed
1/2 cup cornmeal
1/2 cup sugar
1 tbsp cinnamon
3/4 tsp ginger
1/4 cup reduced calorie margarine
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup chopped pear
1 cup fat free sour cream
2 tsp vanilla
1 tsp grated lemon rind
1 egg
1 egg white

Combine dry ingredients in large bowl; cut in margarine until it resembles coarse meal. Remove 3/4 cup of the mixture. Add baking powder, baking soda and salt to remaining flour mixture; stir in pear.
 
Combine sour cream, vanilla, lemon rind, egg and egg white with a whisk. Add to flour mixture, stirring just to combine.
 
Pour into sprayed 13x9 pan; top with reserved mixture. Bake at 350 for 50 minutes or until toothpick inserted in center comes out clean. Cool on wire rack.
