I got this recipe from my friend, Judy. It was originally titled "Halloween Chili" but I changed
the name as it is good anytime.
1 lb lean ground beef
1 medium onion, chopped
2 garlic cloves, minced
1 25 oz
can spicy V-8 juice
1 tsp mustard
1 pinch crushed red pepper
2 tsp chili powder
1 tbsp honey
1/2 cup chopped
celery
1 cup uncooked rice
salt and pepper
Brown ground beef, add onion and garlic; simmer until onion becomes
translucent. Add remaining ingredients; simmer for 20 minutes to let flavors blend. Add water if needed to adjust the consistency.
1/6=358 cal/16 g. fat/2 g. fiber
**Note: I have made this before with lean ground turkey and it lowers the
points value to 267 cal/6 g. fat/2 g. fiber a serving. Also the recipe calls for 2 cans of kidney beans--I am allergic
to beans so I don't add them. But if you do, make sure you add that into the points value as I didn't figure it out.**
