5 slices bacon, cooked & crumbled
1 tsp olive oil
1 small onion, chopped
salt and pepper to taste
5 eggs
1 1/2 cups milk
2 tbsp flour
4 oz shredded swiss cheese
1 cup broccoli, coarsley chopped
Heat oil in pan; add onion, salt and pepper and saute until onion begins to become clear;
remove from heat. Whisk together eggs, milk and flour; stir in cheese. Put onions and broccoli in bottom of a pie tin; pour
egg mixture over vegetables. Bake at 375 for 40-45 minutes or until set. Cool 5 minutes before serving.
