Honey-Orange Loaf

2 tbsp shortening
1 cup honey
1 egg
1 1/2 tbsp grated orange rind
3/4 cup orange juice
2 1/4 cups flour
2 3/4 tsp baking powder
1/2 tsp salt
 
Cream shortening and honey well. Add egg and orange rind; mix well. Combine dry ingredients together in seperate bowl. Alternately add dry ingredients and orange juice; mix well after each addition. Pour into a sprayed loaf pan. Bake at 350 for 1 hour 10 minutes or until loaf is nicely browned.
