1 lb potatoes, peeled and cubed
1 lb lean ground turkey
2 celery ribs, chopped
1 small onion, chopped
2 tsp poultry seasoning
2 tsp thyme
1 tbsp parsley
1/2 tsp pepper
1 egg white
1/2 cup bread crumbs
4 tsp olive oil
1/4 cup flour
2 cups chicken broth
1/2 cup skim milk
1/2 lb baby spinach leaves
Boil potatoes until tender, about 15 minutes.
Meanwhile, place turkey in bowl. Add celery, onion, seasonings and egg white. Combine well
and form into 8 patties. Coat in bread crumbs. Heat oil in large skillet, cook patties 5 minutes per side. Remove and keep
warm. Whisk in flour and chicken broth; thicken and season to taste.
Drain potatoes, add milk, salt and pepper to taste. Mash and then fold in spinach; cover and
let steam wilt spinach.
