Brown Rice California Rolls

1 cup uncooked brown rice, short-grain (not instant)
4 sheets  seaweed
6 oz imitation crab 
1 medium avocado, sliced 

In a medium saucepan, bring  2 1/2 cups of water to a boil. Add rice and reduce heat to low, cover and simmer until liquid is absorbed and rice sticks together, about 40-45 minutes total; remove from heat and let cool.

Lay a piece of plastic wrap on work surface, spread 1/4 of rice (appx 1/2 cup) evenly  in a rectangular shape on top of wrap. Top with seaweed.  Arrange 1/4 each of crab and avocado  down center of sheet (going the long way). Starting from one long end, bring plastic wrap up and over to other side,  pressing down gently, roll up  into a tight roll.

Using a wet, sharp knife, slice each roll crosswise into 6 pieces (discard the very ends if they have no rice or filling). Serve with soy sauce and/or wasabi paste on the side if desired.
