Jalapeno Cream
2 jalapenos, seeded
1 tbsp lime juice
1/4 tsp salt
3/4 cup fat free sour cream
1 tsp paprika
Chili
1 tbsp olive oil
1 bell pepper, diced
1 onion, diced
2 cloves garlic, minced
1 lb lean ground turkey
2 1/2 tsp chili powder
1 tsp cocoa powder
1/8 tsp cinnamon
1 can (28 oz) diced tomatoes
1 tsp salt
2 cups cooked barley
Puree jalapeno cream ingredients until smooth; set aside.
Heat oil, add onion and pepper; cook 2 minutes, stirring occasionally. Add garlic and cook
1 more minute. Add turkey, chili powder, cocoa powder and cinnamon; cook until turkey is browned, stirring often. Add tomatoes,
1/2 cup water and salt. Cover and simmer for 5 minutes. Add barley, recover and simmer for 5 more minutes. Serve topped with
jalapeno cream.
