Chicken Noodle Casserole

8 oz whole wheat egg noodles
3 slices bacon
1 tbsp + 1 tsp olive oil
1 lb boneless, skinless chicken breast, cubed
8 oz fresh mushrooms, sliced
1 med onion, chopped
2 1/2 cups chopped broccoli
2 tsp thyme
1/4 cup chicken broth
1/4 tsp nutmeg
2 oz cheddar cheese, shredded
1/4 cup bread crumbs
 
Cook noodles till al dente; drain and set aside.
 
Meanwhile in a deep skillet cook bacon 2-3 minutes; drain off drippings and set bacon aside. Add olive oil to pan and heat. Add chicken and brown. Push meat to side of pan and add broccoli, onion and mushrooms to pan; cook 3-5 minutes. Stir vegetables and meat together. Season with thyme, salt and pepper. Cook for 5 more minutes. Add bacon, chicken broth and nutmeg. Lower heat and simmer for 2-3 minutes. Preheat broiler. Combine reserved noodles with meat mixture and pour into sprayed baking dish. Top evenly with cheese and bread crumbs. Broil 2 minutes or until lightly browned. Garnish with parsley if desired.
