Indian Style Potatoes and Spinach

1 large onion, chopped
2 cloves garlic, minced
1 tsp olive oil
1 2/3 cup chicken broth, divided
1-1 1/2 tsp curry powder
1-1 1/2 tsp cumin
1/2-3/4 tsp ginger
3-4 drops hot pepper sauce
4 cups peeled, diced potatoes
1 10 oz pkg frozen spinach, thawed and well drained

Saute onion and garlic in oil and 3 tbsp chicken broth, 5-6 minutes or until onions are tender. Add curry, cumin, ginger, hot pepper sauce and remaining broth. Bring to a boil; add potatoes, stir to coat. Reduce heat; cover and simmer for appx 10 minutes or until potatoes are tender, stirring occasionally (add more broth if needed). Stir in spinach and simmer for 3-4 minutes to thoroughly warm.
