Turkey Sausage & Kale Soup

1.22 lb pkg turkey sausage links
2 lbs potatoes, unpeeled, cut in half lengthwise and sliced
1 med onion, diced
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp red pepper flakes
1/2 tsp black pepper
8 cups water
1 lb kale, washed, de ribbed and sliced
12 oz can fat free evaporated milk
 
Remove sausage from casings and cut or crumble into bite size pieces. In large pot combine sausage, potatoes, onion, garlic, salt, red pepper, black pepper and water. Bring to a boil; reduce heat and simmer for 20 minutes or until potatoes are tender. Stir in handfuls of kale into hot soup, adding more and stirring until all the kale has been added. Pour in evaporated milk and stir to combine.  Makes appx 15 cups.
 
1/8 (just under 2 cups)=259 calories/7 g. fat/3 g. fiber
