1 cup bran cereal (the stick or nugget kind, not flakes)
2 1/2 cups flour
2 tbsp sugar
1 1/2 tsp salt
2 1/4 tsp (1 pkg) yeast
1 cup skim milk
1/2 cup water
2 tbsp light margarine
1 egg, slightly beaten
poppy seeds, sesame seeds
In small saucepan heat milk, water and light margarine until just warm. Pour in electric
mixer bowl. Add cereal, 1 cup flour, sugar, salt and yeast. Beat on low until combined. Reserve 1 tbsp egg mixture. Add remaining
egg and beat on low speed for 30 seconds. Beat 3 minutes on high speed. By hand stir in enough flour to make a stiff batter.
Cover loosely and let rise until double in volume. Stir down batter. Divide batter among 16 sprayed muffin cuts. Brush tops
with reserved egg and sprinkle with poppy seeds and/or sesame seeds. Bake at 400 for 18 minutes or until golden brown. Serve
warm.
