Berry Kuchen

2/3 cup unsweetened applesauce

4 egg whites
1/4 cup plain nonfat yogurt
2 tbsp sugar
1 tsp grated lemon peel
1 3/4 cups flour, divided
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 cups assorted fresh or thawed, frozen blueberries, blackberies or raspberries
1/2 tsp cinnamon
1/4 cup brown sugar
2 tbsp light margarine

Preheat oven to 350. Spray a 10 inch cake pan with nonstick cooking spray; set aside.

In bowl whisk together applesauce, egg whites, yogurt, sugar and lemon peel. Add 1 1/2 cups of the flour, baking powder, baking soda and salt. Stir just until combined. Spread batter in prepared pan.

Spread berries over batter. Combine remaining 1/4 cup flour, cinnamon and brown sugar. Cut in margarine with fork until mixture resembles coarse crumbs. Sprinkle over berries.

Bake 50-55 minutes or untill lightly browned. Cool on wire rack. Serve warm or cool.
