6 cups water
1 envelope Noodle Soup mix, dry
1 cup uncooked macaroni
1/2 tsp pepper
2 carrots, sliced
15 oz can whole kernel corn, drained
2/3 cup reduced fat baking mix
1/4 cup skim milk
1 tbsp parsley
Heat water in large pot; when water comes to a boil add soup mix, macaroni, pepper and
carrots. Boil for 10 minutes. Add corn; stir to combine. Make dumplings by combing baking mix and milk. Drop dough equally
into 6 dumplings on top of hot soup. Reduce heat and simmer for 10 minutes uncovered and then 10 minutes covered. Sprinkle
with parsley and serve.
1/6=217 calories/2 g. fat/3 g. fiber
Also good with 8 oz boneless, skinless chicken breast that has been cubed and browned.
Add chicken when you add the corn.
