Crab and Rice Chowder

1 tbsp olive oil
1 small onion, chopped
8 oz sliced mushrooms
1/2 tsp thyme
2 cups coarsely chopped broccoli
2 cups chicken broth
2 cups milk
1 can cream style corn
6 oz cooked crab meat
3 cups cooked long grain rice
 
Heat oil over medium-high hear. Add onion, mushrooms and thyme; cook stirring often, until vegetables begin to brown (about 8 minutes). Add broccoli; cook stirring often until broccoli turns bright green and begins to soften (about 4 minutes). Stir in broth, milk and corn; cook just until heated through, do NOT boil. Stir in crab and rice; cook 2-3 minutes more.
 
1/6 (approx. 1 1/3 cups)=269 cal/4 g. fat/3 g. fiber
