Cranberry Orange Muffins

1 1/2 cup flour
3/4 cup uncooked oats
1/4 cup sugar
1 tsp grated orange rind
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 cup dried cranberries
1 egg
1 1/4 cups skim milk
2 tbsp white vinegar
2 tbsp vegetable oil

In bowl combine flour, oats, sugar, orange rind, cinnamon, baking powder, baking soda and cranberries. In small bowl combine egg, milk, vinegar and oil. Pour liquid into dry ingredients and stir just to combine. Spray a 12 cup muffin tin with nonstick cooking spray. Divide batter evenly. Bake at 375 for 30 minutes.
