Chicken & Spinach Calzones

Pizza dough:
1/2 c warm water
1 1/4 tsp yeast
2 tsp milk
1 tsp light margarine
1 tsp sugar
1/4 tsp salt
1 1/2 c flour
Filling:
6 oz boneless, skinless chicken breast, diced
3 strips turkey bacon, diced
1/2 c fat free cottage cheese
16 oz pkg frozen spinach, thawed and squeezed dry
2 cloves garlic, minced
1 egg
2 T fat free parmesan cheese
2 cans mushrooms, drained
1 onion, chopped
Topping:
1 can tomato sauce
1/2 tbsp italian seasoning

To prepare pizza dough: Dissolve yeast in warm water. Add milk, margarine, sugar, salt and flour. Mix until it forms a ball, then knead for 6-8 minutes or until smooth. (I used my kitchenaid mixer). Let dough rest for 20-30 minutes while preparing filling.

For filling: Brown chicken and turkey bacon in skillet. In bowl combine cottage cheese, spinach, garlic, egg, parmesan, mushrooms and onion. Add meat mixture and stir to combine.

Roll dough out into a large circle, transfer to baking sheet coated with a sprinkling of corn meal (or roll out directly on sheet) Place filling on one half, leaving about 1 inch on edges. Dampen edges with water; fold over other half of dough and crimp to seal. Make two slices in top to allow steam to escape. Bake at 400 for 20-25 minutes. Meanwhile combine tomato sauce and italian seasoning. Just before serving warm tomato sauce for 1 1/2 minutes in microwave (or in small pan on stovetop). Cut calzone into 4 pieces and serve topped with tomato sauce.

1/4=377 calories/5 g. fat/8 g. fiber
 
Note: You could also make 4 seperate calzones if desired.
