2 1/4 cups flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 cup sugar
1/2 cup unsweetened applesauce
2 eggs
1/3 cup vegetable oil
2 mashed ripe bananas
1/2 cup skim milk
1/4 cup semisweet chocolate chips
Line 18 muffin cups with liners and spray liners with nonstick cooking spray (these muffins
tend to stick). In bowl combine flour, baking powder and baking soda. In another bowl beat sugar, applesauce, eggs and oil.
Add bananas and milk alternately with flour mixture; do not overmix. Fold in chocolate chips. Spoon batter into muffin cups,
filling each almost full. Ake at 350 for 20-25 minutes. Remove to wire rack to cool.
