This recipe was inspired by my friend, Heidi...thanks Heidi for the first stuffed pepper I
ever had in my life!
6 bell peppers
2/3 cup uncooked rice
12 oz lean ground turkey
1 onion, chopped
1 tsp minced garlic
6 oz minced cabbage
1 carrot, grated
Beef broth
Cut tops of peppers; remove seeds and set aside. Cook rice according to package directions.
In skillet brown turkey, onions, garlic; season to taste. Add cabbage and carrot; simmer until cabbage begins to wilt. Add
to rice and mix to combine. Stuff peppers evenly with prepared mixture. Set peppers upright in stock pot. Add beef broth halfway
up peppers. Cover and bring to a boil; reduce heat and simmer for 45 minutes.
