Honey-Ginger Crusted Chicken

1 pound skinless, boneless chicken breast halves
1 tbsp honey
1 tbsp orange juice
1/4 tsp ground ginger
1/4 tsp pepper
dash ground red pepper (optional)
1/3 cup cornflake crumbs
1/2 tsp dried parsley flakes
 
Spray a shallow baking dish with nonstick coating. Place chicken breasts in baking pan. In small bowl combine honey, orange juice, ginger, pepper and red pepper (if desired). Brush honey mixture over chicken. Combine cornflake crumbs and parsley. Sprinkle cornflake mixture over chicken to coat. Bake, uncovered at 350 for 18-20 minutes or until chicken is tender and no longer pink.
