1 cup sugar
1/4 cup light margarine
1 2/3 cups mashed bananas (about 3 bananas)
1/4 cup skim milk
1/4 cup fat free sour cream
2 egg whites
2 cups flour
1 tsp baking soda
1/2 tsp salt
Preheat oven to 350. Beat sugar and margarine until well blended. Add banana, milk, sour
cream and egg whites; beat well. Add dry ingredients and beat until blended. Spoon batter into 4 sprayed mini loaf pans (or
1 large sprayed loaf pan). Bake mini loafs for 45 minutes or large loaf for 70 minutes or until a toothpick inserted near
the center comes out clean. Cool on a wire rack for 10 minutes then remove from pan and cool completely on racks.
Each mini loaf makes 4 servings. 1 serving=145 calories/2 g. fat/1 g. fiber
Each loaf makes 12 slices. 1 slice=193 calories/2 g. fat/1 g. fiber
