1/4 cup reduced calorie margarine
3 oz junior mint candies
1 cup flour
1/4 tsp baking soda
1/8 tsp salt
2/3 cup sugar
1/3 cup cocoa
1 egg
1 egg white
Preheat oven to 350. Spray bottom of 8x8 pan with nonstick spray. In 2 cup glass measuring
cup combine margarine and junior mint candies; microwave for 30 seconds. Stir until smooth and set aside. In bowl combine
sugar, cocoa, egg and egg white. Mix on medium speed until well blended. Add mint mixture; blending well. Add flour, baking
soda and salt; stir to combine. Pour into prepared pan. Bake 20-25 minutes, but don't overbake.
