2 cups All Bran or Fiber One cereal
1 cup skim milk
3/4 cup canned pumpkin puree
2 tsp cinnamon
1/2 tsp cloves
1/4 tsp ginger
1 egg
1/2 cup brown sugar
1 1/4 cups flour
1 tbsp baking powder
1 tsp salt
Mix cereal and milk, let rest 5 minutes. Add pumpkin, cinnamon, cloves, nutmeg, egg and
brown sugar; stir well. Add flour, baking powder and salt; stir just to combine. Spray muffin tins with nonstick cooking spray
(don't use paper liners--they stick!!) Bake at 350 for 18-22 minutes.
1/12 (1 muffin)=116 calories/1 g. fat/4 g. fiber
**You can add 1 chopped apple with the flour if you wish, it only increases the calories
by 7 per muffin.**
