Jalapeno Corn Bread

1 cup frozen corn, thawed & drained if needed
1 cup skim milk
1/3 cup fat free sour cream
1/4 cup chopped cilantro
1 jalapeno, seeded and minced
1 tbsp vegetable oil
2 eggs
3/4 cup flour
1 cup cornmeal
1 tbsp sugar
2 tsp baking powder
1 tsp salt

Preheat oven to 400. Spray a round baking pan with nonstick spray and set aside. In medium bowl combine wet ingredients with a whisk. Add dry ingredients and stir just to combine. Pour into prepared baking pan. Bake for 25 minutes or until lightly browned and set. Cut into wedges to serve.
