Caramel Apple Cobbler Cake

1 1/2 cups reduced fat baking mix
1/3 cup sugar
1/2 cup skim milk
2 golden delicious apples, peeled and cubed
1 tbsp lemon juice
1/2 cup brown sugar
1 tsp cinnamon
1 cup boiling water

Heat oven to 350. Spray a 9x9 pan with cooking spray. Mix baking mix, sugar and milk together. Spread in bottom of prepared pan. Top with apples and drizzle with lemon juice. Mix together brown sugar and cinnamon; sprinkle over apples. Pour boiling water over top--DON'T STIR! Bake for 45 minutes. Enjoy while still hot.
