Baked Chile Relleno

1 large egg, seperated
1 large egg white
dash salt
1 canned whole small green chili, drained
3/4 ounce shredded cheddar cheese

Preheat oven to 350. Spray a 6" dish with nonstick spray; set aside. In medium bowl, at high speed beat egg whites and salt until stiff. In small bowl, lightly beat egg yolk; fold into egg whites. Spread half the mixture in prepared dish. Open chili and lay flat on top. Sprinkle with cheese. Spread remaining egg mixture on top to make an even layer. Bake until golden brown and center is set, 15-20 minutes. Serve with salsa if desired.
