Chicken Enchilada Soup

I got this recipe off the WW boards, but forgot to note who posted it.

1 lb boneless, skinless chicken breast
1/2 cup diced onion
6 cloves garlic, minced
4 cups chicken broth
1 cup masa harina (corn flour--NOT corn meal)
3cups water
10 oz can enchilada sauce
16 oz pkg Velveeta Light, diced
1 tsp chili powder
1/2 tsp cumin

Add 2 tbsp chicken broth to large saucepan over medium heat. Add onions and garlic and saute for about 2 minutes, or until onions become translucent. Add remaining broth. Combine masa harina with 2 cups water; whisk until blended. Add masa mixture to pan. Add remaining 1 cup water, enchilada sauce, velveeta and spices. Bring to a boil then reduce heat and simmer for 30-40 minutes or until thick.

1/8 (appx 1 1/3 cups)=307 calories/12 g. fat/2 g. fiber
