Preheat oven to 400. Spray a muffin tin with nonstick cooking spray. Soak cereal in milk
for 5 minutes to soften cereal. Add egg and applesauce. Add dry ingredients and diced apple if using; stir just to combine.
Fill cups almost full. Bake for 18-22 minutes.
