Zucchini Bread

This is the muffin variation

1 1/4 cups shredded zucchini
3/4 cup granular splenda
1/2 cup brown sugar
1/3 cup applesauce
1 egg
1 tsp vanilla
1 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon


Heat oven to 350. Place zucchini into a piece of cheesecloth and squeeze out any excess moisture; set aside. In bowl combine splenda, brown sugar, applesauce, egg, and vanilla. Add flour, baking powder, baking soda, salt and cinnamon. Stir to combine. Fold in zucchini. Spray a 1 quart loaf pan with nonstick spray. Pour mixture into pan and bake 40-45 minutes.

1/8=87 calories/1 g. fat/1 g. fiber

*Variation: Add 1/4 cup cocoa and 1/3 cup chocolate chips. Make into 12 muffins and bake for 22-25 minutes.

1 muffin=104 calories/2 g. fat/1 g. fiber
