I got this recipe off of the WW boards (it was posted by Crissybear)
1 3/4 cup quick oats, divided
2 tbsp packed brown sugar
1 cup flour
1/2 cup sugar
1 tbsp baking powder
1/4 tsp salt
1 cup milk
2 egg whites, slightly beaten
2 tbsp vegetable oil
1 tsp grated lemon zest
1 tsp vanilla
1 cup blueberries, fresh or frozen
Heat oven to 400. Line muffins tins with paper liners or spray bottoms only of 12 muffin
tins. Combine 1/4 cup of the oats with brown sugar in small bowl; set aside. In medium bowl combine remaining 1 1/2 cups oats
with other dry ingredients and mix to combine. In seperate bowl whisk together milk, egg whites, vegetable oil, zest and vanilla.
Add to dry and stir just to combine. Gently fold in blueberries. Fill muffin cups almost full. Top with reserved mixture and
pat lightly. Bake 20-24 minutes or until light brown. Let muffins stand a few minutes before removing from pan.
1 muffin (1/12 recipe)=163 calories/3 g. fat/2 g. fiber
