Caramel Banana Topping (recipe below)
1 1/2 cups reduced fat baking mix
1/2 cup sugar
1/2 cup splenda
1/3 cup cocoa
3/4 cup water
1 egg
1 egg white
Prepare Caramel Banana Topping; keep warm.
Heat waffle iron; spray with nonstick spray if needed. Stir together remaining ingredients
until blended. Using 1/4 cup measuring cup, pour batter by scant cupfuls onto center of hot waffle iron. Bake until steaming
slows (or as directed by manafactor). Carefully remove waffle and serve with topping.
Caramel Banana Topping
1/2 cup brown sugar
1/4 cup skim milk
1/4 cup light corn syrup
1 tsp vanilla
3 medium bananas, sliced
Stir all ingredients except bananas in 1 quart saucepan until mixed. Heat to boiling, stirring
occasionally; remove from heat. Add bananas; stir gently until well coated.
1 serving=1 waffle, 1 tbsp sauce and 1/4 banana which is 173 calories/2 g. fat/2 g. fiber
